I definitely love the rule of 3rds. its just that my brain has a hard time processing it and often times drifts me to center it.

its a brain flaw. but I'll get it one of these days.

Agreed. I would straighten the horizon a bit, I think it slopes down to the left. may just be an illusion though.

I think it naturally slopes down to the left.

do I need a little more foreground? I feel like its a little tight at the bottom.

Nope. Looks good the way you have it, your subject fills the frame and no question what your subject is. Background landscape & sky only contribute to the overall composition, and don't distract. Adding more foreground would, in my opinion, leave the impression of your subject "floating" rather than anchored.
